Zucchini (Filled With Ground Meat)

INGREDIENTS

1 kg. zucchini
300 gr. ground meat
1 onion
2 table spoons of rice
1 table spoon of oil
1 table spoon of tomato sauce
salt, pepper
chopped parsley or dill

PREPARATION

Plane the onion and add it to the ground meat. Add the washed rice, oil, tomato sauce and salt-pepper into it. After you have added the chopped parsley of dill mix all of these well. Add some water too.
Peel the zucchinies and divide them into two or three pieces. Carve the zucchinies and fill inside with the mixture with meat. Put a slice of tomato on the top of every zucchini.
Place the zucchinies in a pan as the tomatoes stay on the top. Add some water in the pan. Cook it until the zucchinies become soft.
Serve the zucchini food with yoghurt and dill.

Muffins With Honey and Carrot

I've seen these muffins on Evcini's weblog. It's very delicious.
Don't worry about the long list of ingredients, it's really simple to bake these muffins.

INGREDIENTS

280 gr. flour
1 tsp baking powder
1 tsp carbonate
1/2 tsp salt
2 tsp cinnamon
---
1 egg
60 - 90 ml. milk or water
2 table spoon honey
110-140 gr. sugar
340 gr. planed carrot
1 tsp vanilla
90 ml. oil
60 - 85 gr. grounded walnut or raisins

for the top;
100 gr. labne
110 gr. powdered sugar
1/2 tsp vanilla

PREPARATION

  1. Oil the muffin pans or place the ready paper ones into your muffin pans. If you are using silicone muffin pans, you don't have to oil them. Make the temperature of your oven 190 - 200 C degress. If it's turbofan make it 170 C degrees.
  2. In a big glass bowl mix the sifted flour, baking powder, carbonate, salt, and cinnamon.
  3. In an other big glass bowl whisk the egg by a fork. Add the milk, honey, sugar, carrot, vanilla, and the oil into the egg. Stir it well.
  4. Add all the wet ingredients into the dry ingredients. Then add the walnut or raisins. Don't stir too much.
  5. Put this mixture into muffin pans by a spoon. Bake them 20-25 minutes until they take the same shape when you press on them.
  6. After the muffins become warm, prepare the cream for the top and put it on the muffins. Decorate the muffins by walnut if you like. (i did not use this cream, i squeezed some ready chocolate sauce on the muffins, and decorated them with white chocolate.)

Eggplant Salad With Chickpea



INGREDIENTS
1 kg. eggplant
1 glass of chickpea
red pepper cooked in hot ashes or over live coals
onion (i don't know how to call fresh ones, click the word and see what it looks like)
parsley
for the sauce;
olive oil
lemon juice
vinegar
salt
red pepper

PREPARATION

Cook the eggplants in the oven or on the fire with their skin. Then split them down in the middle by a knife, after that take the inside of the eggplants out with the help of a spoon.
In an another pan, boil the chickpea and then mix it with the eggplants.
Chop the parsley, fresh onions and the red peppers cooked in hot ashes or over live coals. Then add all these materials to eggplant+chickpea mixture.
Then prepare the sauce by mixing the materials that I had wrote above for the sauce. And split the sauce to the salad. Put it in the fridge then serve the salad cool.

Truff


I had prepared these truffs for my guests last week. The receipe is belong to Nino. This is a very simple and delicious receipe. I don't know how to call it; cookie or desert? Let's just say truff :) Hope you enjoy it!

INGREDIENTS

250 grams of cake
200 grams of liquid cream
100 grams of bitter chocolate
100 grams of milky chocolate
for decorating;
pistachio

PREPARATION

Boil the liquid cream in a pan. Then take it off the oven and add the bitter chocolate which has been pulled to pieces. Make the chocolate melt with the heat of the cream by mixing it. Then crumble the cake into this mixture. Leave it for to cool in the fridge for two hours. Then make balls from this mixture and line up them on some wrapping paper resistant to oil. Leave it for to cool in the fridge again for two hours. Then melt the milky chocolate by bain-marie. Cover all the balls with this melted chocolate. Last, decorate the truffs by pistachio.

Wet Cookie



INGREDIENTS

25 grams of cocoa
1/2 package of margarine (125 grams)
1 egg
10 grams of baking powder
5 grams of powdered vanilla
75-80 grams of oil
75 grams of sugar
enough flour

for the sherbet;
225 grams of sugar
285 grams of water

for the top;
pistachio

PREPARATION

Put the sugar and water for the sherbet in a pan and cook it. After it becomes dense, leave it for to cool. After it becomes cool, put it in the fridge for an hour.
Mix the ingredients for the dough for to make a soft dough. Make balls of dough in any size you like. Cook them in the oven at 200 C degrees until top of the cookies crack.
Get the cool sherbet and then plunge the hot cookies one by one into the sherbet. Then quickly take them off.
Decorate the cookies by pistachio.
Serve the cookies after they rest for a while.

Boiled Egg With Parsley




This is a different way of serving egg on breakfasts, and it's very delicious too. Here is the receipe;
Boil the eggs and then peel them. Chop them into pieces and add some salt, red and black pepper into the eggs. Then squeeze a lemon and add it into the eggs too. Chop some parsley into it. You can add chopped dill too if you want.

Chicken Salad with Yoghurt

Boil some chicken. Leave it for to cool for a while and then tear to shreds it. Mix the chicken with some yoghurt and mayonnaise. Add some chopped pickle, dill, and corn into it. If you like you can add some planed carrot into it as i do. Finally decorate the salad in the way you like.
